Smothered pork chops with mushroom sauce
1 teaspoon of sweet chili powder
1 teaspoon of garlic powder
¼ teaspoon of salt
teaspoon of pepper
4 pork chops
2 tablespoons of olive oil
2 tablespoons of butter
2½ cups brown mushrooms, sliced
5 garlic cloves, crushed
1 tablespoon of parsley
1 teaspoon Italian seasoning
½ cup of chicken broth
1½ cup heavy cream
fresh parsley, for garnish
In a small bowl, whisk the chili powder, garlic powder, salt and pepper until blended.
Pat the pork chops dry. Season generously with the spice blend. Put aside.
In a skillet, add olive oil and butter. Add the pork chops; sear 3 to 5 minutes on each side. Transfer to the plate.
To make the mushroom sauce: In the same pan, add the mushrooms. Sauté until golden brown. Add the garlic, parsley and Italian seasoning. Sauté for 2 minutes. Add the broth and heavy cream. Stir to combine. Simmer 5 minutes until slightly thickened.
Return the pork chops to the sauce. Simmer 2-3 minutes until the pork chops are cooked through. Garnish with fresh parsley and serve.
