Traditional Homemade Linzer Cookies for Christmas

Method

1. Combine the softened butter with the egg yolks in a large bowl using a hand blender (or electric blender, if available).

2. Add powdered sugar and vanilla extract and mix again.

3. Add a little orange or lemon zest (optional).

4. Gradually add flour and mix. Knead with your hands to form a dough of consistency. Knead until smooth and soft.

5. Wrap the dough in foil and leave it in the refrigerator for an hour.

6. When cool, remove dough from refrigerator, remove foil and roll out dough into 3mm foil on lightly floured board / surface.

7. Cut out different shapes with cookie molds. Roll up the leftovers again and cut out the remaining cookies.

8. Heat the oven to 180 degrees Celsius. Place parchment paper on a metal baking sheet and line cookies to bake for about 8 to 10 minutes, until edges turn light brown.

9. When the cookies are cooked, remove them from the oven and let them cool on a wire rack.

10. Assemble cookies by spreading a thin layer of jam (or other toppings) on bottom surface of cookie (top of cookie will face out). Place a second cookie on top and gently squeeze them together. Repeat the process until all the cookies are assembled.

Decorate the cookies with powdered sugar, melted chocolate, sprinkles, nuts or desiccated coconut and enjoy!
